Terroir
Located on the slopes of Pécharmant, the 35 hectares of vines aged 21 years on average offer a yield of 42 hl/hectare, or, after selection of vinifications, 160,000 bottles in total. This low yield allows the quality of the Pécharmant terroir to be expressed all the better, composed of sand, gravel and ferruginous gravel in the subsoil (- 1.80 m).
Vinification
Fermentation begins and lasts 8 to 10 days in vats, with temperature control; it is followed by a period of maceration of the wine “on marc” of approximately 10 to 15 days according to impressions of daily tasting, i.e. 20 to 25 days of vinification.
Tasting
The particularity of the Pécharmant vineyard comes from its soil of “Périgord sand and gravel” whose clay and iron have been carried underground by superficial leaching. This deep and impermeable layer, called “tran”, gives Pécharmant this taste of terroir so typical of the appellation. It gives rise to generous, full-bodied, well-structured wines, reaching their fullness only after 6-7 years of aging.
