Terroir
The vines are located on a plateau and gentle slopes on clay-limestone soil. The planting density is ăþþþ plants per hectare. They are superbly sunny and protected from the southwest winds by a curtain of trees, which gives this wine its typicity and character. Since 2005, the vineyard has been converted to organic farming with biodynamic practices for working the soil.
Vinification
The harvest is mechanical and takes place early in the morning to avoid oxidation. The grapes are cooled then macerated for 3 hours. The juice is cold fermented then left on its lees to intensify the flavors and richness on the palate. 18% are vinified in old barrels in order to obtain more complexity.
Tasting
Pale yellow color, exotic fruit flavors, herbaceous, blackcurrant aromas.
Good balance with richness and length. Excellent in a very aromatic style. Ideal as an aperitif or with raw fish.
Serve chilled.
